210mm Chef 1095 Redgum





Chef knife made from 1095 high carbon steel. The blade has an s-grind, which are the concave sections ground into the blade. This dramatically improves food release and reduces the suface friction while cutting. The s-grind combined with an extremely fine sharp edge will give outstanding performance in the kitchen.
The handle is made from stabilized curly grained redgum with a matching saya.
It has a stainless ferrule with a g10 spacer.
This is a carbon steel knife so it will rust if left wet or dirty.
When my carbon steel knives get spots of rust on them I oil them and the scrub with a scotch brite. This removes any surface rust but will leave a dark mark on the blade. Over time and repetition the entire blade will darken and develop a patina that gives good rust protection.

Stabilizing wood is a process where timber is submerged in a vacuum chamber filled with a heat cured resin. The vacuum is then applied and all the air is sucked out of the grain of the timber and the resin pulled through saturating it completely. The resin soaked timber is then cured in an oven leaving it much more durable and highly water resistant.
