210mm Chef knife made from Cpm-154 stainless steel.
Cpm-154 is a powder metallurgy version of the popular 154cm stainless knife steel.
The powder metallurgy manufacturing process produces very homogeneous, high quality steel that holds superior levels of toughness, abrasion resistance, and corrosion resistance when compared to steels produced by conventional melting practices.
The blade has an s-grind, which are the concave sections ground into the blade. This dramatically improves food release and reduces the suface friction while cutting. The s-grind combined with an extremely fine sharp edge will give outstanding performance in the kitchen.
The handle is made from stabilized curly grained Western myall with a matching saya. Western myall is an extremely hard timber native to the arid regions of southern Australia.

Stabilizing wood is a process where timber is submerged in a vacuum chamber filled with a heat cured resin. The vacuum is then applied and all the air is sucked out of the grain of the timber and the resin pulled through saturating it completely. The resin soaked timber is then cured in an oven leaving it much more durable and highly water resistant.
