210mm Chef S-Grind N690 Myall
210mm chef knife made from N690 stainless steel.
Austrian made Böhler N690 stainless is a high quality, well balanced cutlery stainless with excellent edge-holding, stain resistance, and toughness.
The blade has an s-grind, which are the concave sections ground into the blade. This dramatically improves food release and reduces the suface friction while cutting. The s-grind combined with an extremely fine sharp edge will give outstanding performance in the kitchen.
The handle is made from stabilized western myall, and extremely hard timber native to the arid regions of southern Australia.
It has a stainless ferrule, and matching myall saya.

Stabilizing wood is a process where timber is submerged in a vacuum chamber filled with a heat cured resin. The vacuum is then applied and all the air is sucked out of the grain of the timber and the resin pulled through saturating it completely. The resin soaked timber is then cured in an oven leaving it much more durable and highly water resistant.
